Made since the 17th century, St Nectaire is a semi-hard/semi-soft cow's milk washed rind. traditionally matured on a straw bed. The cheese has a very supple paste with a washed and sometimes fury rind that reminds the smell of the volcano caves of Auvergne. 

Easy to eat on an antipasto board or the perfect flavour kick in a quiche or omelette.
