Urban List Sydney: 13 of The Best Cheese Toasties in Sydney Right Now - Wed 21st July 2021

'It would have been criminal of us to put together this list without including authentic French toastie makers. Well, we couldn’t be happier to include knowers and lovers of all things cheese—La Boite A Fromages. Established in 2012 by cheesemongers Aurore Ghigo and Tom Ippolito, the Northern Beaches shop offers every type of Aussie and European cheese your stomach desires, with charcuterie boxes, French Raclette, fondue kits, and pantry-fillers like pâté and foie gras. But if you ask the locals, there’s a good chance they’ll recommend the cheese toasties.

The well-known sandwiches come with a three cheese blend (comté, Swiss gruyere and Emmental), bay leaf and nutmeg-infused bechamel, Dijon mustard and Pepe Saya butter on purposefully dryer/older sourdough from Brasserie Bread. From there, go wild with extra add-ons like ham, prosciutto, truffle paste, onion relish, tomato relish or fresh tomato. Otherwise, opt for the mushroom melt with mushroom, bechamel, taleggio, and truffle paste.'

Sydney Eat Street: Best French takeaway for Bastille Day 2021 - Saturday 10th July 2021

No need to put away the French berets as you can still celebrate La Fete Nationale with takeaway at home by picking up some tasty French fare.

“Le Marché offers the largest selection of French food in all Australia: Our customers are often saying that le Marché is the prettiest market in Sydney and that they feel like being in France somewhere in the countryside,” says French-native and market founder, Solveig Coulon.

That’s quite impressive considering the event isn’t even a year old, but then that’s also a testament to the quality of the vendors Coulon has gathered, such as regional and local cheeses from award-winning cheesemongers Aurore Ghigo and Tom Ippolito of Cheese on Wheels, and saucissons, pâtés and Cassoulet, Toulouse saucissons from former chef, Jean-Marc Amar of Saucisson Australia, a staple on the market circuit with a cult-like following.

“People travel to the market just to buy from them,” Coulon says.

The dreamy Mushroom Melt at Cheese on Wheels is so damn delicious and warming on a cool day you’ll want to snuggle with it. Maybe that’s just me… Sauteed field mushrooms, bechamel, truffle paste and enough Taleggio to spill into the pan, forming a fragile cheese tutu. This joint is operated by one of the world’s top cheesemongers so don’t consider entering unless you’re prepared to leave with a crate of irresistibly fragrant fromage.

"You can't buy happiness but you can buy a cheese toastie and it's nearly the same." So says the appropriately named "sandwich board" outside the amazing La Boite a Fromages - Cheese On Wheels in Balgowlah. ⁣⁣

It is a quaint cheese shop run by some lovely French people, well it was when I was there, and they have so many cheeses my knees were wobbling - they seriously know cheese!! They also do a lot of markets from what I gathered instore.⁣⁣

For my Cheese toastie I added Ham and Truffle paste and today I've just got back from my second visit for the Mushroom Melt! The Ham and Truffle Toastie was awesome but I could have eaten a second one hahahaha⁣. Today's Melt - mushrooms, bechamel, taleggio and truffle paste - it made me explode with delight.⁣

Cheese on Wheels review by Jane Lawson for Escape.com.au - 28 July 2020

Such consideration is also evident upon first bite of their signature ‘Cheesie’ made by slathering Brasserie Bread sourdough with Pepe Saya butter, Dijon mustard, house-made béchamel (using Country Valley milk and sustainable flour) and heaping it with enough grated Comté, Emmental and Swiss Gruyère to guarantee decadent spillover – essential for the crisp cheese frill around the edges.
