The dreamy Mushroom Melt at Cheese on Wheels is so damn delicious and warming on a cool day you’ll want to snuggle with it. Maybe that’s just me… Sauteed field mushrooms, bechamel, truffle paste and enough Taleggio to spill into the pan, forming a fragile cheese tutu. This joint is operated by one of the world’s top cheesemongers so don’t consider entering unless you’re prepared to leave with a crate of irresistibly fragrant fromage.

"You can't buy happiness but you can buy a cheese toastie and it's nearly the same." So says the appropriately named "sandwich board" outside the amazing La Boite a Fromages - Cheese On Wheels in Balgowlah. ⁣⁣

It is a quaint cheese shop run by some lovely French people, well it was when I was there, and they have so many cheeses my knees were wobbling - they seriously know cheese!! They also do a lot of markets from what I gathered instore.⁣⁣

For my Cheese toastie I added Ham and Truffle paste and today I've just got back from my second visit for the Mushroom Melt! The Ham and Truffle Toastie was awesome but I could have eaten a second one hahahaha⁣. Today's Melt - mushrooms, bechamel, taleggio and truffle paste - it made me explode with delight.⁣

Cheese Monger Aurore Ghigo competed in the International Best Cheesemonger Competition in June 2019 and represented Australia. She competed amongst carefully selected top cheese mongers from across the world.
