The Pines Three Daughters Cheddar

A word from the cheesemaker " Born out of a deep love of traditional cheese-making methods and the desire to create a cheese that fully captures the intricate flavours of our milk, the herd, the pastures and the entire ecosystem here at The Pines.

Milled by hand, lovingly bound in cloth and sealed in Organic Ghee from our mate @pepesaya, then matured for 12 months in the old stone silo.

Named for the 3 girls that helped us put down roots and challenge us to grow - not just as individuals - but as a family ❤️"

The Pines Dairy is a micro-dairy located on the South Coast of NSW since 1854. Think of lush green grass and rolling hills overlooking the sea :)

Cheese, yogurt, and gelato are only produced in small batches using the milk of their herd. 

We just love the fact that this micro-dairy is only crafting a few kinds of cheese but perfecting them.
