The King of all the Gruyeres. Only crafted from two breeds of cow "Tarentaise" & "Abondance", it will take 500liters of milk for a 40kg wheels. This raw milk hard-cooked curd is highly recognisable with its concave side. We only stock summer milk, Beaufort, for its distinctive floral and nutty flavour. A real treats when we can get on some in, that we love to share with you.
