Translate by "sitting in the cellar", Challerhocker is only crafted by cheesemaker Walter Rass, with from Summer Alpine pasture raw cow's milk. For a minimum of 12months the cheese is washed with a brine of herbs and spices. The Paste is dense nutty with a hint a spice. The rind is slightly sticky. A favourite Alpine cheese
