Mimolette or "Boule du Nord", is hard cheese in a shape ball. Extremely crumbly, it's usually eaten as a nibble cut into little chunk. Salty, with a toffee caramel flavour it's best enjoyed on its own. The unusual colour comes a natural food colour from the annatto seed.
