“Paglietta” belongs to the “Paglierina“ type cheese that is a speciality of the provinces of Turin and Cuneo in Italy.  Known by a variety of names, almost all based on paglia, the Italian term for “straw”. 

Formerly aged on straw mats (no longer used), which left characteristic stripes on their soft rind. This ageing technique also promoted the growth of whitish moulds on the rind.
