Pecora Dairy Curly Red

Hand crafted from their flock of Ewe, we have been closely working with Michael & Cressida since 2011. Curly red is blend of cow and ewe's milk, washed rind.  Soft and gooey under the rind , with a chalky but light heart displaying sweet and sour cream flavour from the ewe' s milk. As the cheese matures, it get more pungent and funky. Curly red is a seasonal cheese that change throughout the year.
