Produced in the Languedoc region of France, the blue veins are made using the same pencillium roqueforti as the well-known Roquefort. It's a semi-soft blue cheese which is not quite as spicy and has a much creamier texture than its cousin, but don't let this fool you. It has a depth and richness in flavour which still pairs extremely well with sweet white wines and dessert wines.
