Fleur du Maquis is a traditional Corsican ewe’s milk cheese, coated in fragrant wild herbs from the island's maquis. As it matures, the rind develops a natural green-hued mould, deepening its earthy, floral aromas and adding complexity to the supple, creamy paste.
