Hosting Tips

THREE OR FIVE CHEESES, NEVER FOUR

Odd numbers create natural balance and give guests a journey to follow. Aim for variety across texture, milk type, and intensity — a soft and bloomy, a semi-firm, and something bold or aged as your anchor. Mix cow, sheep, and goat's milk where possible. Always favour one generous piece over several small ones: a large wedge is more inviting, easier to cut, and keeps the cheese fresher for longer. As a guide, allow 80–100g per person for aperitif, or 150–200g if cheese is the star of the table.

CRACKERS & ACCOMPANIMENTS

Keep crackers neutral — plain water crackers or a sourdough crispbread let the cheese do the talking. Add one more characterful option alongside (a seeded cracker or sliced baguette) but avoid anything heavily herbed or sweet that competes. For accompaniments, think in threes: one sweet element (quince paste or honey), one fresh (figs or grapes), one textural (walnuts or dried apricots). Resist filling every gap — a generous board is not a crowded one.

SERVING

Remove your cheeses from the fridge at least 45 minutes before serving — cold cheese is muted cheese, and flavour only fully opens at room temperature. Use one knife per cheese to keep flavours clean and separate. Before bringing the board to the table, cut the first slice or chunk off each cheese yourself: it breaks the seal, shows guests the paste inside, and makes the whole board instantly more approachable.
